Upon my initial encounter with waterless cookware, I must admit that I was quite perplexed. At first glance, it appeared to be just like any other ordinary stainless steel cookware, except for its peculiar lids.

Numerous inquiries flooded my mind: What sets it apart? How does it function? Can it truly achieve the feat of cooking without water?

Moreover, the overarching question that loomed over me was: What is the purpose or necessity of engaging in waterless cooking?

If you find yourself harboring similar uncertainties, fear not, for you have stumbled upon the perfect source of enlightenment. Allow me to embark on a quest to unravel the answers to all my queries... and yours!

What is waterless cookware?

Other types of cookware can also achieve a similar vapor seal, depending on how well the lids fit. Waterless cookware, typically made of heavy stainless steel, is specifically designed with lids that fit tightly to create a vapor seal. 

This allows for waterless cooking, where the food cooks in its own juices. As the pot is heated, the lid forms a seal with the pot, trapping the food's vapor and creating a pressure cooker-like environment.

Is waterless cookware healthier?

According to certain sources, when food is cooked at low temperatures with minimal moisture, it is said to retain minerals up to 20 times more than when prepared using other cooking methods. This raises the question of whether this makes the cookware itself healthier. 

Manufacturers claim that it does, but according to the Cookware Advisor, the healthiness of the cookware depends on the person using it. It is more appropriate to consider waterless cookware as a tool that can assist in cooking healthier meals, rather than attributing all the health benefits solely to the cookware itself. 

It is important to distinguish between the tool and the skill of the cook.

Can waterless cookware be used for regular cooking too?

Certainly. Waterless cookware offers you the flexibility to cook in any manner you prefer and stick to your familiar cooking techniques. Essentially, waterless cookware comprises of top-notch stainless steel cookware with perfectly fitting lids. Consider waterless cooking as an added advantage that allows you to explore a wider range of culinary possibilities.

What material is waterless cookware made of?

Waterless cookware, in its simplest form, refers to stainless steel cookware that is made up of multiple layers or plys. These plys are present not only on the base but also extend up the sides of the cookware, creating what is known as clad cookware.

You may come across waterless cookware that is labeled as tri-ply, 5-ply, 7-ply, or even 9-ply. However, the number of plys or layers is not as important as the thickness or gauge of the metal used.

Typically, the innermost layer of waterless cookware, which comes into direct contact with the food, is made of a high-quality grade of stainless steel known as Surgical Stainless steel. The outer layer, on the other hand, is often made of magnetic stainless steel to enable induction cooking. The middle layer(s) of the cookware are usually made of aluminum or copper, which ensures excellent heat conduction.

Surgical stainless steel?  What does that even mean?

To gain a better understanding, it would be beneficial to provide a concise overview of stainless steel in general. There are over 60 different grades of stainless steel, but not all of them are suitable for use with food. According to the NSF International Standard for Food Equipment Material, food grade stainless steel must belong to the AISI 200 series, 300 series, or 400 series. The most commonly used type of food grade stainless steel in cookware is the 304 series, which is part of the 300 series. 

Within the 304 series, the two most popular types are 18/10 and 18/8. These numbers indicate the percentage of chromium and nickel present in the stainless steel. For example, 18/10 stainless steel contains 18% chromium and 10% nickel. Both 18/10 and 18/8 stainless steel are corrosion resistant due to the presence of nickel and perform equally well. 

Another grade of stainless steel, known as 316 stainless steel, is less common than 304 stainless steel. It is considered a higher-end version and contains a small amount of molybdenum. The chemical composition of 316 stainless steel consists of approximately 16-18% chromium, 10-14% nickel, and 2% molybdenum. 

This grade of stainless steel offers even greater resistance to corrosion but is also more expensive. Due to its exceptional corrosion resistance, 316 stainless steel is often used in surgical equipment and biomedical implants, earning it the name "Surgical Stainless Steel." 

However, it is important to note that there is no formal definition for "surgical stainless steel," and manufacturers may use this term to refer to any grade of corrosion-resistant steel. Therefore, both 304 and 316 stainless steels can be considered surgical or medical-grade stainless steel. Consequently, when a cookware manufacturer claims that their product is made of surgical stainless steel, it could be either 304 or 316 stainless steel.

Which leads directly to the next frequently asked question:

Is 316 surgical stainless steel superior to the more common 304 stainless steel for cooking?

Concise answer: No.

In everyday cooking, it is highly unlikely that you will discern any disparity between a high-grade 304 stainless steel pan and a 316 surgical stainless steel pan. However, it is always advantageous to have the option to choose, particularly when it involves selecting between two superior alternatives.

Why get waterless cookware?

If you examine the assertions made by a waterless cookware manufacturer, the typical selling points or justifications for purchasing it include:

3. Healthier cooking that preserves nutrients through steam.

As we have previously discussed, while these claims may hold true, they are not exclusive to waterless cookware. For instance, let's delve deeper into each of the aforementioned advantages of waterless cookware:

1. Many high-quality stainless steel cookware options are constructed using what is loosely referred to as surgical stainless steel. Waterless cookware brands simply tend to market this feature more prominently for some reason.
2. Cooking time will naturally be shorter whenever a steam environment is created, regardless of whether it is achieved with waterless cookware or not, as long as the lids fit well.
3. It is important to note that cookware itself does not inherently make food healthier. The responsibility for cooking nutritious meals lies with the chef, not the cookware.

I’m going to offer a different scenario as to why you would consider waterless cookware.
